Kothu Paratha

This recipe is my take on the Kothu Paratha we have at Spice Hut, a restaurant close to home. Mine is a much simpler and less spiced version.





Ingredients

  • 2 parathas cooked and broken into pieces
  • 2 eggs beaten lightly
  • 1/2 cup or more cooked and shredded chicken (used left over grilled tandoori chicken)
  • 1 small onion sliced
  • 1-2 chillies sliced
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 6-8 currypatta
  • 1 tbsp oil
  • salt to taste
  • 4-5 stalks+leaves of corriander chopped

Preparation

  1. Heat oil, add onion and fry till translucent.
  2. Add ginger, garlic, chillies and currypatta and stir for 2 min.
  3. Add the eggs, do not stir. Before the eggs set, throw in the paratha.
  4. Stir so that the egg coats the paratha.
  5. Throw in the chicken and stir.
  6. Add salt to taste and continue stirring for a few min till everything is well combined.
  7. After the heat is turned off, add the fresh corriander.
