This is a really simple and quick recipe - you just need fresh fish and all the spices handy. If you don't have a grill, a cast-iron pan set on high will work fine as well - just be prepared for the smoke alarms.

Ingredients
1 lb butterfish fillets - about 1/2 inch thick
1 tbsp butter, melted
2 cloves garlic, crushed
1 tbsp paprika
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1/8 tsp ground black pepper
1/8 tsp dried thyme
1/8 tsp dried oregano
1/8 tsp salt
A pinch of sugar
Preparation
CAJUN SPICES
Mix all the ingredients in a bowl, and reserve.
GRILLED FISH
Set a grill to heat on high. Wash and pat the fish fillets dry. Mix the garlic and the butter, and brush onto both sides on the fillets.
Sprinkle the Cajun spices on one side of the fish, and set the fillets to grill, spice side down. Grill for about 3 minutes.
Sprinkle the Cajun spices on the unseasoned side of the fillets, and flip them over. Grill for another 3 minutes or so, and remove.
